indulge IN THIS CRISPY tasty BENGALI CLASSIC. A FRIED POTATO CUTLET packed with flavor IN EVERY BITE.


Serves: 4 - 6 people

Cook Time: 30 - 45 minutes


INGREDIENTS:

  • 4 large boiled potatoes 

  • ½ teaspoon of cumin powder

  • 4 finely chopped green Thai chilis (lower the quantity of chilis if your spice tolerance is low)

  • 1 small fine chopped onion

  • ½  teaspoon of garlic powder 

  • ½  teaspoon of chili powder

  • 1 teaspoon of salt (adjust per your taste) 

  • ¼ cup of chopped cilantro

  • 1 egg

  • 1 teaspoon of oil (Vegetable or Extra Virgin Olive oil, your choice!)

  • 1 cup of breadcrumbs

  • 2 - 3 tablespoons of oil (for frying)


INSTRUCTIONS:

⋄ Step 1:

Using a medium pan, add 1 small chopped onion, 1 teaspoon of oil,½ teaspoon of garlic powder and 4 finely chopped green Thai chilis over medium-high heat, cook and lightly mix for 3 minutes (or till onions are slightly brown).

⋄ Step 2:

Now add the 4 boiled potatoes, ½ teaspoon of chili powder, ½ teaspoon of cumin powder, and 1 teaspoon of salt into the pan; mash the potatoes in with the mixture for about 3 minutes (or till potatoes are mashed and mixed evenly).

Once the potato mixture is ready, take it out of the pan and place it into a bowl. Allow the potato mixture to cool down completely.

⋄ Step 3:

Using a medium bowl, break 1 egg into the bowl and mix it well. This will be used as the binder for the Aloo chop.

Using a plate, place breadcrumbs onto the plate, this will be used as the crispy outer layer for the Aloo chop.

Grease hands with oil, this will help handle the potato mixture when creating the patty.

⋄ Step 4:

Now take a small amount of the potato mixture, and roll it between your palms. Pat it and shape it into a thin patty.

Dip the patty in the egg bowl and coat the entire patty, after coating with egg take the patty and place it on the breadcrumb plate and coat the entire patty with the breadcrumbs.

Repeat the process till all the potato mixture has been made into patties, then coated with egg, and then finally coated with breadcrumbs.

⋄ Step 5:

Using a large pan, add 2 - 3 tablespoons of oil under medium-high heat. Once the oil is hot, change the heat to medium-low heat, carefully place patties into the pan one at a time till the pan has enough patties for an even fry (leave space between the patties). Fry both sides, occasionally flipping as needed. Cook patties for about 5 minutes (or till both sides are lightly crisp and golden).

Serve hot as an appetizer or serve as a side dish with any of my curry dishes.
