A CLASSIC family recipe FROM OUR HOME, CRAFTED BY MY PARENTS AND ENJOYED THROUGHOUT my childhood. BBQ HAS never TASTED this good.
Serves: 4 people
Cook Time: 1 hour - 1 hour 30 minutes
INGREDIENTS:
2 pounds of bone-in chicken
2 tsp salt (adjust per your taste)
1 tsp black pepper
2 tbsp red chili powder
2 tbsp ginger paste (refer to my ginger paste recipe below!)
2 tbsp garlic paste (refer to my garlic paste recipe below!)
2 tsp lemon juice
¼ cup oil (Vegetable or Extra Virgin Olive oil, your choice!)
4 tbsp ketchup
INSTRUCTIONS:
⋄ Step 1:
After washing and cleaning your chicken, cut slits into each piece. Set aside and put into a large mixing bowl.
Add 2 teaspoons of salt, 1 teaspoon of black pepper, 2 tablespoons of chili powder, 2 tablespoons of ginger paste, 2 tablespoons of garlic paste, 2 teaspoons of lemon juice, ¼ cup oil, and 4 tablespoons of ketchup into the bowl, mix well ensuring chicken is covered evenly.
⋄ Step 2:
Cover the bowl and refrigerate for approx 2 hours (the longer you marinate, the better).
After marinating for desired length of time, it's time to grill your chicken until fully cooked.
Take 1 medium sized ginger root and a quarter cup of water and blend until you have the consistency of a puree. Set aside and use the required amount for the recipe. Store the remainder in the fridge for future use.
