NABELA'S GO-TO RECIPE FOR A wholesome AND DELICIOUS DINNER. 


Serves: 8 people

Cook Time: 45 minutes to 1 hour


INGREDIENTS:

  • 6 medium boiled potatoes (peeled, and cut)

  • 8 chicken thighs(bone-in, skin on or boneless!​) 

  • 2 - 3 tbsp olive oil 

  • 2 tsp garlic powder 

  • 1 tsp adobo powder

  • 1 tsp cajun powder

  • 1 tps onion powder 

  • 1-2 tsp salt (adjust per your taste)

  • 2 tsp pepper (adjust per your taste)


INSTRUCTIONS:

⋄ Step 1:

Preheat your oven to 400°F.

After cleaning your chicken, place your chicken onto a prep surface. I use a cooking sheet for ease. Brush your oil on both sides of each chicken thigh. Sprinkle each ingredient evenly onto both sides of each chicken thigh, ensuring equal distribution of all seasonings. 

⋄ Step 2:


Lightly grease a baking dish appropriate for the chicken thighs. (I use a 13 x 9 baking dish). Place your 8 chicken thighs onto your baking dish.

Bake your chicken uncovered for 35 - 46 minutes (until the internal temperature reads 165°F). I like to baste the chicken periodically while it is in the oven to keep the chicken moist. 

​Once the chicken is fully cooked, pair with your favorite sides and enjoy!

This recipe also makes for delicious leftovers, and can be incorporated into sandwiches and salads when shredded.
