AN EASY crowd favorite AND NABELA'S SIGNATURE SIDE THAT BURSTS with flavor IN EACH BITE.


Serves: 6 - 8 people

Cook Time: 30 - 45 minutes


INGREDIENTS:

  • 24 ounces of golden baby potatoes

  • 2 tbsp of olive oil

  • ½ tbsp of adobo powder

  • 1 tbsp of garlic powder

  • ½ tbsp of cajun powder

  • ½ tbsp of salt (adjust per your taste)

  • ½ tbsp of pepper (adjust per your taste)

  • freshly grated parmesan cheese

  • freshly minced parsley (to garnish) 


INSTRUCTIONS:

⋄ Step 1:

Preheat oven to 400°F and wash your potatoes.

Dice your potatoes into quarters or halves depending on your size preference. (When working with golden baby potatoes, I typically cut each potato in quarters). 

 ​⋄ Step 2:

Pour your potatoes out onto a non-stick baking sheet and spread out as evenly as possible, then pour in 2 tablespoons of olive oil evenly onto the potatoes. Evenly sprinkle each of your spices on top of the potatoes. 

Sprinkle freshly grated parmesan on top of your potatoes, as evenly as possible. 

​ ​⋄ Step 3:

Bake your potatoes for 35 - 45 minutes, turning them every 15 minutes to ensure a nice even bake. Once your potatoes are cooked all the way through and are golden brown, they are ready to be taken out of the oven. 

To garnish, finely mince parsley and sprinkle on top.

These potatoes are best served warm and can be paired as a side dish or served as a snack!
